6 Ingredient Egg-Cellent Easter Candy



You are working on your Summer Body and what comes hopping along? Easter! You can’t go to the gas station or pharmacy without seeing all of the brightly colored plastic candy wrappers! And if you stare at them long enough, you hear them yell “Buy me!“ “Have a cheat!” “One won’t hurt you!” And before you know it, you‘ve bought every single bunny-shaped, chick-shaped, egg-shaped sweet they have. And then the guilt sets in,...why did you do this? You are killing your goals, keeping your nutrition on point, why is the temptation SOOO Real???


i come bearing great news and it’s not even Good Friday yet! You can have those chocolate peanut butter cups that you grew up with but what if I told you, it’s only 95 calories for 1 egg, 6 carbs and 3 grams of sugar oh and the best part?? It’s only 6 ingredients! Not artificial additives or chemicals you can’t pronounce and they are VEGAN!


I’m telling you, they are simple to make and your kids will love them!!!




What You Need:


For the inside:

1/2 c Peanut Butter

2 TBSP Cpconut Flour

2 1/2 TBSP Grade A Maple Syrup

pinch of sea salt


for the coating:

3 TBSP Cocoa Powder

3 TBSP Coconut oil

1 TBSP Grade A Maple Syrup

pinch of salt


That’s it!!! Can you believe it?? And if you are on Ultimate Portion Fix, we count it as a yellow and a tsp! Just like those Peanut Butter Balls from Fixate.




Directions:

In a medium bowl, combine the ingredients for the peanut butter inside. Stir until a dough-like consistency. Pro Tip: Spray a spatula with avocado oil or coconut oil before stirring to avoid peanut butter from sticking!!


Form small balls and shape to look like an egg.


Place on parchment paper. This recipe makes 6-8 eggs depending on how big you make them. Make sure they are less than 1/4” thick.


Place in freezer for 20 min to harden.


Now its time to melt some chocolate!


In a double boiler over medium heat, add all the ingredients for the chocolate coating. Stir consistently til completely melted and chocolate coats on the spoon.


Remove peanut butter eggs from the freezer, with a spoon gently drop one of the eggs into the bowl of melted chocolate and gently flip to coat evenly. I like to do this twice.


Place coated egg on wax paper and continue til all are coated.


Put all coated eggs into the freezer for 25-30 min until they are hard.


Store them in the refrigerator until you serve. These are great gifts. Place them in plastic bags with ribbon. Enjoy!
